It’s Pongal time! The prestigious festival to thank for the rice harvest of the season which has been going on since ancient times in the southern part of the country. We bring to you this dish of Sakkarai Pongal or sweet Pongal, which is offered in this festival and also is just so yummy…
The humble ingredients of parippu or moong dal, rice, and jaggery create nothing less than magic in your mouth.

How to make Sakkarai Pongal at home
Add dal and rice to a heavy bottom pan and dry roast on medium flame till they turn aromatic, approx 5-6 minutes.
Now rinse them well.
Add them to a cooker and pour 4 cups of water. Cook for 3-4 whistles on medium flame.
Mash them, they should have khichdi like consistency.
Meanwhile, prepare jaggery syrup. Add water and jaggery in a pan, let the jaggery dissolve.
Boil the syrup for 2-3 minutes till it turns slightly thick. Keep this aside.
Once the pressure releases, open the cooker and mash the rice slightly.
Add jaggery syrup to the rice and dal
Add cardamom powder and cook on medium flame till everything combines well, approx 4-5 minutes.
Now heat ghee in a pan and fry the cashews, raisins, cloves, and sliced coconut. Add a pinch of edible camphor and pour this over the sweet Pongal
