1. Butter softened¼ cup
2. Castor sugar1/2 cup
3. Flax egg1
4. Vanilla extract½ tsp
5. Red food color1 tsp
6. All-purpose flour1 cup
7. Cocoa powder¼ cup
8. Baking soda½ tsp
9. Baking powder1/4 tsp
10. Castor sugar ( for coating the cookies) ½ cup
11. Cup icing sugar (for coating the cookies) ½ cup
1. In a large bowl, beat the butter and sugar until smooth and fluffy.
2. Add the flax egg and mix until well combined.
3. Add the vanilla extract.
4. Add the flour, cocoa powder, baking soda, baking powder, and red gel food color and mix until the dough consistency is achieved.
5. Chill the dough in the refrigerator for 1 hour.
6. Preheat the oven at 180C and line a baking tray with a silicone mat or parchment paper.
7. Scoop out equal balls of the cookie dough and coat them in castor sugar followed by icing sugar and place them on the prepared tray.
8. Bake for 15-18 minutes until it cracks on top and the edges are well baked.
