1. Large Potatoes, peeled and chopped2

5. Frozen Green Peas1/2 Cup
6. Vegetable Oil1 Tbsp
7. Butter3 Tbsp
8. Cumin Seeds1 Tsp
9. Red Onions, chopped2
10. Ginger, chopped 1-inch
11. Garlic, chopped5 cloves
12. Green Chilies, chopped2
13. Large Tomatoes, chopped3
14. Tomato Puree1/3 Cup
15. Salt to taste
16. Water
17. Pav Bhaji Masala2 tbsp
18. Red Chili Powder1 tsp
19. Kasuri Methi2 Tsp
20. Chopped Cilantro3 Tbsp

1. Put all the vegetables like potatoes, carrots, cauliflower, green peas into a pressure cooker and add 1/2 cup water. pressure cook for two whistles and let the pressure release naturally. Open the pressure cooker and mash the vegetables and keep them aside. Now, heat butter and oil in medium heat in a pot. Add cumin seeds after the butter melts and allow it to sizzle. Now, add chopped onions and then thoroughly mix the ingredients.
2. Now, heat butter and oil in a heavy-bottomed pot. Add cumin seeds after the butter melts and allow it to sizzle. Now, add chopped onions.
3. Saute and cook the onions until they turn golden brown. Once the onions are golden brown in color add green chili, garlic, and ginger. Now, cook them for one minute. Once the raw smell of the ginger-garlic goes add the chopped tomatoes to it, mix the ingredients really well, add salt to taste, tomato puree and cook for a couple of minutes till the tomatoes are soft and mushy.
4. Now, add red chili powder, pav bhaji masala, and mix the ingredients really well before adding Kasuri methi.
5. Add the boiled vegetables and mash them until they have properly mixed with the ingredients. Add water and continue to mix. Now, cover the pot and make sure to set the heat to low.
6. Allow it to simmer for 10 minutes. stir in between to ensure that the bhaji doesn't stick to the bottom of the pan. Open the pot and add butter into it along with chopped cilantro. Add lemon juice and allow it to simmer for a minute and turn off the heat.
7. Serve bhaji with butter pav. to make the pav take a pan, heat it on medium flame, and add butter into it. Wait for the butter to melt and then sprinkle pav bhaji masala right on top of the butter. Place buns on the pan and toast the pav until they become golden brown and crisp on either side.
