About Homemade Coconut Rice: Coconut rice is a delicious and popular South Indian dish that is made during Navratri, Pongal, and other festivals. It is also served as a prasadam in some South Indian temples.
Homemade Coconut Rice

1. Oil3 tsp
2. Mustard1 tsp
3. Urad Dal1/2 tsp
4. Chana Dal1 tsp
5. Few Curry Leaves
6. Dried Red Chilli1
7. Slit Green Chilli2
8. Finely Chopped Ginger1-inch
9. Cashew10
10. Grated Coconut¾ cup
11. Cooked Rice2 Cups
12. Salt½ tsp
1. Heat three teaspoons of oil in a kadai and then add mustard, urad dal, chana dal, curry leaves, and dried chilli into it. Saute the mixture and then add ginger and green chilli into it. Saute it slightly again.
2. Add cashew nuts and roast them until their color turns into golden brown. Now, you can add the grated coconut into the mixture and saute it for 1 minute.
3. Add two cups of rice into it along with salt and then thoroughly mix the ingredients.
4. Simmer it for a couple of minutes to allow the rice to absorb the coconut flavour & then serve it with a curry.
