Duck roast is a specialty from the Kuttanad place in Kerala. It’s famous all across the state. Another specialty from the Christian community of the state, this dish has flavors to top your palate for sure. How to make Duck roast at home
Make a paste of the ingredients from sambar onion to salt and marinate the duck with half of the paste for an hour.
Heat oil in a pan and pour some oil and ghee in combination and saute the marinated duck in it. And take it out and keep
In the same oil add the onions, the remaining ground paste, and fry it till the oil separates. Add 2 cups of boiling water to this and transfer the sauteed duck pieces.
Cover the pan and cook the duck well, garnish with some fried curry leaves and chopped coriander.
