Also known as Mishti or Mithe Pulao, this popular dish of Basanti Pulao is a Bengali festive delight that is made during the auspicious occasion of Durga Puja or Bengali new year is surely a heart stealer. This aromatic and bright yellow-colored rice is flavored with whole spices. Raisins and cashews add a royal touch to this dish. Traditionally this dish is prepared with small grain rice.     How to make Basanti Pulao at home

    Step 1

    Wash the rice and air dry.

    Step 2

    Add ginger, turmeric, cardamom, cinnamon, cloves, bay leaves, and ghee. Mix well and rest for an hour.

    Step 3

    Boil water in a pan. In a kadhai add ghee and roast the cashews. Add the marinated rice and roast for 5-6 minutes. Add the raisins and cook for another 2 minutes.

    Step 4

    Add the boiled water to the pan along with salt and sugar. Cover and cook on low heat for about 10 minutes or till done. Rest before serving.
