Also known as Mishti or Mithe Pulao, this popular dish of Basanti Pulao is a Bengali festive delight that is made during the auspicious occasion of Durga Puja or Bengali new year is surely a heart stealer. This aromatic and bright yellow-colored rice is flavored with whole spices. Raisins and cashews add a royal touch to this dish. Traditionally this dish is prepared with small grain rice. A must-try to see how the divine flavors play around!

How to make Basanti Pulao at home
Wash the rice and air dry.
Add ginger, turmeric, cardamom, cinnamon, cloves, bay leaves, and ghee. Mix well and rest for an hour.
Boil water in a pan. In a kadhai add ghee and roast the cashews. Add the marinated rice and roast for 5-6 minutes. Add the raisins and cook for another 2 minutes.
Add the boiled water to the pan along with salt and sugar. Cover and cook on low heat for about 10 minutes or till done. Rest before serving.
