This coffee is produced using coffee beans which have been partially digested by the Indonesian palm civet and then excreted. During the process of digestion within the civet’s gut, the coffee cherries and their pulp is removed and the beans are left intact. Hence, the beans undergo a type of fermentation, that is responsible for the supreme taste of the coffee.
